Sweet and Dessert Wines

Considered as some of the finest wines in the world, sweet and dessert wines are highly sought after for their remarkable complexity, honeyed attractiveness and their incredible ability to age. The misconception that sweet wines should be relegated to the end of the meal is unfortunate. In reality, they are best as a prelude. Part of the problem is the term 'sweet'. While these wines do have residual sugar, the greatest have such stunning minerality and vibrant acidity that any 'sweetness' becomes secondary.

The greatest sweet wines are painstakingly made in one of three methods: Noble rot (Botrytis Cinera), Ice Wine (Eiswein), or air drying. Botrytis is the most common method and can only take place in certain regions and climates, Sauternes and Barsac being the most renowned example. The unique micro-climate here draws fog inland from the nearby Ciron and Gironde Rivers, covering the vineyards in mist which allows the botrytis to develop on the grapes. This harmless fungus absorbs much of the remaining moisture and concentrates the sugars which give the wines their distinctive and delicious flavours. The harvest is an involved and arduous process that entails picking the botrytised grapes in successive tries (passes through the vineyard) to ensure that each berry is perfectly ripe. Yields are incredibly low and selection is severe, with top estates like Château d'Yquem only producing one glass of wine per vine. This means that total production is also low and resulting cases are scarce.
